What’s the story behind the Easter bunny?

For many children around the world, the excitement of hunting eggs left by the Easter bunny is part of the magic of Easter. Rabbits are often associated with Spring due to their fertility at this time of year … but where did the story of the Easter bunny come from? The story of the Easter bunny dates back to the Anglo-Saxons and their celebration of Eostre – the Goddess of Light and Fertility, whose earthly symbol was the rabbit.

German settlers in the U.S.A then introduced the story of the Easter bunny in the 1700s – children believed that if they behaved themselves, then they would be left a basket of eggs. The boys turned their hats into baskets and the girls did the same with their bonnets. We couldn’t resist including this adorable photograph of some little Easter bunnies! Seasonal Food Ideas

Here at Katie’s Cards, we’re always thinking about ways in which we can be as ‘green’ as possible. We’re proud of the fact that our ecards are very environmentally friendly but there are tonnes of other choices that we all make every day which impact the environment. One way we can be a little kinder to the environment is by buying and eating as much seasonal, locally-produced food as possible. I thought it would be helpful, therefore, to suggest a few seasonal recipes perfect for Easter weekend:

– In terms of vegetables, spinach, shallots, leeks and, of course, spring onions are all in season. Why not whip up this vegetarian ricotta and spinach lasagna?

– Meat wise, it’s all about rabbit and lamb at this time of year. For a twist on the classic Easter meat, try these lamb and apricot meatballs.

– Rhubarb is also in season at this time of year, and this Easter rhubarb and apple pie would be the perfect chocolate-free dessert for an otherwise cocoa-rich Easter.

Homemade Easter Eggs

If you feel like getting creative then why not try your hand at making some homemade Easter eggs? You can find a good recipe here. One of the perks of making your own Easter eggs is that you can mix and match different types of chocolate – you can make an egg which is half dark chocolate and half white chocolate or you can carefully mix two different types of chocolate together to create a marbled effect on your egg. Though the heating of the chocolate may not be appropriate for children to help with, children of all ages will love the opportunity to pipe their own shapes and Easter messages onto the eggs.

Easter is certainly a good time of year for those with a sweet tooth. In fact, only Halloween tops Easter for the amount of confectionary sold. The amount of chocolate eggs, bunnies and chicks made is staggering: approximately ninety million chocolate bunnies and sixteen billion jelly beans are produced for Easter each year!

Why do we hunt eggs at Easter time?

One of the reasons that eggs are associated with Easter is because they conjure images of revival, renewal and rebirth. Historically, eggs were forbidden by Christians in the days leading up to Easter and so they became a treat when they were finally allowed on Easter day. So why do we hold Easter egg hunts? There are many explanations from all different cultures behind this but one of the reasons that spans across cultures is the belief that finding eggs brings good luck. Apparently, decorating Easter eggs is also an age-old tradition that people have been doing for thousands of years. The first chocolate Easter eggs were made in 19th Century France and  Germany.

So, now that you know a brief history of the Easter egg, you’d better get decorating/hiding/eating yours! We also have some EGG-cellent Easter ecards on the Katie’s Cards website.

Hot Cross Buns

The fact that Easter is almost upon us provides an excellent excuse to roll up your sleeves and whip up some delicious hot cross buns. Hot cross buns have long been associated with Easter and with Good Friday in particular, but why? For some people, the cross on the top of the bun is meant to symbolise the crucification of Jesus whilst for others, the bun comes from a Pagan tradition of the Anglo-Saxons. Sharing the buns with friends and family is meant to bring good luck and friendships for the coming year.

What is the origin of the Easter egg?

With Easter fast-approaching (it’s on the 31st March this year!), we were debating the meaning behind the Easter egg. It turns out that eggs are associated with Easter because they symbolise new life and rejuvenation. Traditionally, the church banned eating eggs during Holy Week – the week that leads up to Easter. Modern Easter eggs are often made of chocolate and this practice is thought to have originated in Germany and France during the 19th Century. It seems that chocolate Easter eggs make it into the shops earlier and earlier every year!

Hi all,

We’ve been extremely busy recently making lots and lots of new ecards for you. If you have a browse through the collection you will see that we have added some new sections to the website for Note cards and invitation e cards and there are lots of new cards in there for you to send to your loved ones for many different purposes, or just to say hello!

At the moment we are working on a brand new ecard that will be suitable for sending to loved ones who enjoy flowers. We are making several different versions of it so you can send it for a whole range of different occasions.
