Seasonal Food Ideas

Here at Katie’s Cards, we’re always thinking about ways in which we can be as ‘green’ as possible. We’re proud of the fact that our ecards are very environmentally friendly but there are tonnes of other choices that we all make every day which impact the environment. One way we can be a little kinder to the environment is by buying and eating as much seasonal, locally-produced food as possible. I thought it would be helpful, therefore, to suggest a few seasonal recipes perfect for Easter weekend:

– In terms of vegetables, spinach, shallots, leeks and, of course, spring onions are all in season. Why not whip up this vegetarian ricotta and spinach lasagna?

– Meat wise, it’s all about rabbit and lamb at this time of year. For a twist on the classic Easter meat, try these lamb and apricot meatballs.

– Rhubarb is also in season at this time of year, and this Easter rhubarb and apple pie would be the perfect chocolate-free dessert for an otherwise cocoa-rich Easter.
